It’s Applefest time at Walmart!!! Fall and apples just go together so nicely, don’t they? Warm apple pie on a cool, crisp evening, sipping on apple cider, or just indulging in a mid-day snack of apples and peanut butter. I love everything about apple season especially the baking.
Walmart offers a variety of different kinds of apples. Honey Crisp and Sweet Tango are among my personal favorites while they also offer Bartlett and the traditional favorites like Red and Granny Smith. As a part of the Walmart Moms, I was asked to visit my local store and check out Walmart’s apple selection. So with the giftcard provided, I headed to my local store in search of the perfect type of apple and other ingredients to make apple cinnamon muffins.
I was immediately drawn to the apple totes. I loved that they were easy to select and the price of $.97/lb. was great! These totes can hold quite a few apples! The apples in the totes in my store were McIntosh apples. Because of their tart flavor, I thought McIntosh apples would offer a great contrast in flavor to the sweet cake base in our apple cinnamon muffins.
Apple Cinnamon Muffins (from a boxed cake mix)
- 1 cup apple juice
- 1 1/2 tsp cinnamon
- 2 McIntosh apples, diced
- 1 boxed yellow cake mix
- Coarse Sugar
Follow the directions on the back of the yellow cake mix box as far as how much oil and eggs to add to the cake mix. Replace the water with apple juice. My cake mix called for 1 cup of water so I substituted apple juice instead. Add in cinnamon and diced apples. Fill greased or lined muffin tins 3/4 full of batter, sprinkle the top of each muffin with coarse sugar (sugar sprinkles can be found in the baking aisle at Walmart) and bake according to package directions or until toothpick comes out clean and the tops of the muffins are golden brown.
